My Mediterranean Shakshuka for Two

A warm, comforting dish that's perfect for brunch, dinner, or any time you want something satisfying and flavorful.

Ever since visiting Israel in 2019, I've been making my own version of shakshuka at home. Of course - make it with homemade sourdough bread to enjoy it best! 

 

Ingredients (Serves 2)

The Base:

  • 🥫 1 can diced tomatoes (no salt added)
  • 🧅 1/2 to 2/3 white onion
  • 🌶️ 1/2 to 3/4 red bell pepper
  • 🧄 2 tbsp minced garlic (or 4 fresh cloves)
  • 🥚 4 eggs

Spices:

  • 🌶️ 1 tbsp paprika
  • 🔥 1/2 tsp smoked paprika
  • 🌿 2 tsp cumin
  • 🧂 1 tsp salt
  • ⚫ 1 tsp ground pepper
  • 🌶️ 1 tbsp chili powder
  • 🔥 1/4 to 1/2 tsp chili flakes (adjust to taste)

Optional Additions:

  • 🧀 1/4 block feta cheese
  • 🌿 Fresh cilantro or mint
  • 🥖 Crusty baguette or rustic sourdough bread

Instructions

Step 1: Prep the Vegetables

Cut the onion into medium slices and the red bell pepper into medium slices or dice.

Step 2: Start the Base

Heat some olive oil in a pan over medium heat. Add the onion slices and cook for about 2 minutes. Add the bell pepper and minced garlic, stirring until the onions become translucent.

Step 3: Add the Spices

Add all the spices to the pan and mix well for 2 more minutes. The mixture should smell aromatic and well-blended.

Step 4: Add the Tomatoes

Pour in the entire can of diced tomatoes and stir everything together. Taste and adjust seasoning as needed. Let the mixture simmer until it's bubbling gently.

Step 5: Add Feta (Optional)

If using feta, crumble it into the simmering sauce. Reduce heat to low-medium to maintain a gentle simmer.

Step 6: Create Wells for Eggs

Make 4 small wells in the tomato mixture for the eggs. The sauce should still be gently bubbling. Carefully crack each egg into its own well, then cover the pan with a lid.

Step 7: Toast the Sourdough

Place the bread in a 350°F oven for 3-7 minutes until warmed and lightly toasted.

Step 8: Poach the Eggs

Let the eggs poach in the sauce for 4-8 minutes. Check doneness by gently tapping the top of each egg after 4 minutes. The whites should be set while the yolks remain runny.

Step 9: Serve

Remove from heat when eggs reach desired doneness. Serve portions with 2 eggs per person, plenty of the tomato sauce, and the warm bread on the side. Garnish with additional feta and fresh herbs if desired.

Tips:

  • Take your time with the onions - they should be properly translucent
  • Adjust chili flakes according to your heat preference
  • Use the bread to scoop up the sauce and egg
  • The dish is meant to be a bit messy and communal

Enjoy this satisfying Mediterranean classic that brings warmth and flavor to any meal.
